Chilled & Frozen
Leg meat cut into cubes at the size you specify. We supply it within our Legs range under Lamb, to UK wholesale kitchens — restaurants, butchers and caterers. Typical uses include skewers and kebabs, curries, tagines, stews and pie fillings.
What it is
Cubed leg, cut fresh from boned-out legs. Leg dice is leaner than shoulder dice and holds a neat, square shape, which is why it looks right on a skewer and keeps its form in a fast-cooked dish.
How it is prepared
Cut to your dice size. State the size when ordering — we cut to the figure you give and do not substitute one.

Typical trade use
Skewers and kebabs, curries, tagines, stews and pie fillings. Fast and hot, or it dries — leg dice does not have the fat to survive a long, slow cook the way shoulder dice does.
