Chilled & Frozen
Wagyu beef is sold against a marbling grade, and it is the grade — not the name on the label — that determines how it eats. We do not describe a grade here: tell us the grade, the cut and the origin you require and we will confirm exactly what we can supply before the order is placed.
What it is
We do not set out a grade or origin claim on this page — that is confirmed directly with you at the point of order, because grade determines both eating quality and what we can supply at any given time. What we can say is the format: it is cut and portioned in the same way as the rest of our steak-cuts range.
How it is prepared
Cut and graded to your specification. Availability is confirmed at the time of order rather than held as standard stock, so tell us what you need with enough notice for us to confirm it can be supplied.
Typical trade use
Premium steak service, tasting menus and small-portion dishes where the marbling, not the size, is the point are the standard uses. It is ordered alongside our Beef Ribeye and Beef Tomahawk rather than as a standalone item on most kitchens’ order sheets. See the full Steak Cuts range, within our Beef category, for the cuts it is most often compared against.
Ordering notes
This is heavily marbled beef and needs less heat and smaller portions than a standard steak — treating it like an everyday cut wastes it. Because grade, cut and origin are confirmed per order rather than fixed on this listing, please get in touch before a first order. Kitchens comparing marbled options also stock our Beef Ribs for the everyday rib-primal cut. Ingredient and allergen information is supplied with the goods; confirm the current specification.

Frequently asked questions
What grade of Wagyu do you supply?
We do not fix a grade on this listing — tell us the grade, cut and origin you require and we will confirm what we can supply before the order is placed.
Why isn’t the grade listed on the page?
Grade determines eating quality and availability changes, so we confirm it directly with each order rather than publishing a fixed specification that may not match what we can supply at the time.
Cut specification, portion size and preparation notes are passed to our butchers exactly as you give them — we do not adjust or simplify them. Average unit weights vary from carcass to carcass; please confirm weights and case quantities when ordering.
