Beef rump comes from the hindquarter above the leg and is made up of several muscles running in different directions, which gives it more flavour than fillet and more chew than sirloin. We supply it whole, seamed into individual muscles, cut into steaks at your thickness, or diced — carving direction matters more on rump than on most other steak cuts because of the mixed grain.

What it is

Rump sits above the top of the leg and is not a single uniform muscle but several joined together, each running a slightly different direction. That is why the grain visibly changes across a rump steak, and why a kitchen that carves it correctly gets noticeably more tenderness out of it than one that does not.

How it is prepared

Whole, seamed into its component muscles, cut into steaks at the thickness you specify, or diced for skewers and stroganoff — we prepare it to whichever of these your kitchen needs, rather than supplying one fixed format.

Typical trade use

Steak service, sharing platters, and dice for skewers and stroganoff cover most orders. Why does rump need to be carved differently to sirloin?

Rump is made up of several muscles running in different directions rather than one uniform muscle, so the grain changes across the cut and carving direction needs to follow it.

Can rump be supplied diced?

Yes — tell us the dice size you need for skewers, stroganoff or stew use.

Cut specification, portion size and preparation notes are passed to our butchers exactly as you give them — we do not adjust or simplify them. Average unit weights vary from carcass to carcass; please confirm weights and case quantities when ordering.
