Chilled & Frozen
The small under-fillets from beneath the saddle — thin, tender strips. We supply it within our Chine & Chumps range under Lamb, to UK wholesale kitchens — restaurants, butchers and caterers. Typical uses include small plates, garnishes, skewers and dishes that need a tender strip rather than a portioned piece.
What it is
The slender tenderloins that sit under the backbone, one either side. They are small, uniformly tender, and there are only two per animal, which is why they tend to be sold separately rather than left in a saddle.
How it is prepared
Whole, trimmed of silverskin, or cut into strips.
