Chilled & Frozen
Individual chops cut from the best end — the tenderest chop on the animal. We supply it within our Best Ends range under Lamb, to UK wholesale kitchens — restaurants, butchers and caterers. Typical uses include grill and charcoal service, mixed grills, and plated mains where the portion count has to be exact.
What it is
The best end cut down into single chops, each with its own rib bone. Because the muscle does very little work, these are the quickest-cooking and most tender chops the carcass produces.
How it is prepared
Single or double, trimmed or untrimmed, cut to the thickness you specify.

Typical trade use
Grill and charcoal service, mixed grills, and plated mains where the portion count has to be exact. High heat, short time. A few minutes each side is usually enough — these are small and they carry on cooking off the heat.
