Ox liver is stronger and firmer than lamb liver, with a more pronounced flavour that suits dishes built around a robust taste rather than a delicate one. We supply it fresh, whole, sliced to your thickness, or diced, with membrane removed on request — for braised liver dishes, pâtés, terrines and traditional liver and onions.

What it is

Beef liver has a firmer texture and stronger flavour than the lamb liver used in more delicate dishes, which is why it appears more often in braises and pâtés than in a quick pan-fried preparation. It needs either a very short, hot cook or a long, slow one — there is little middle ground.

How it is prepared

Whole, sliced to your specified thickness, or diced. Membrane removed on request if your kitchen does not want to do that preparation step in-house.

Typical trade use

No — it is generally stronger and firmer in flavour than lamb liver, which is why it’s used in robust, braised dishes rather than delicate quick-fry preparations.

Can the membrane be removed before delivery?

Yes, on request — tell us if you want it removed rather than doing that step yourself.

Cut specification, portion size and preparation notes are passed to our butchers exactly as you give them — we do not adjust or simplify them. Average unit weights vary from carcass to carcass; please confirm weights and case quantities when ordering.
