Meat portion yields describe how much of a cut’s original bone-in weight actually reaches the plate as servable meat, once bone, trim and cooking loss have been accounted for. There is no single conversion figure that applies across every cut, carcase and kitchen, because bone content, trim standard and cooking method all vary. Why There Is No Single Yield Percentage

Ask five kitchens how much usable meat comes off a bone-in leg, a whole bird or a rack, and the answers will likely differ — and several of them can be correct for their own operation at the same time. A single carcase yields differently from another of the same species, because conformation, fat cover and how the animal was cut at the primary stage all vary.
