Chilled & Frozen
Foreshanks from the shoulder — braising joints, one per cover. We supply it within our Shoulders range under Lamb, to UK wholesale kitchens — restaurants, butchers and caterers. Typical uses include plated mains that portion themselves, banqueting where the cover count has to be exact, and slow-cooked dishes on winter menus.
What it is
The lower foreleg, taken off the shoulder. Slightly smaller and finer than the hind shank and almost entirely muscle and connective tissue, which is what turns a braising liquid glossy.
How it is prepared
Whole, or trimmed and frenched at the bone end for presentation.

Typical trade use
Plated mains that portion themselves, banqueting where the cover count has to be exact, and slow-cooked dishes on winter menus. Brown first, then braise slowly in liquid until the meat retreats from the bone.
