Best end with the rib bones cleaned back — the presentation rack. We supply it within our Best Ends range under Lamb, to UK wholesale kitchens — restaurants, butchers and caterers. Typical uses include plated fine dining mains and anything carved to order in front of the guest.
What it is
The rack with the meat and membrane scraped from the ends of the rib bones so they sit clean above the eye. It is done for the plate rather than the palate: the cut cooks the same, it simply looks finished without further work in the kitchen.
How it is prepared
Whole rack French trimmed, or cut down into French trimmed single and double cutlets.

Typical trade use
Also the standard preparation for cutlets served standing. Sear fat-side first, then roast and rest. Cover exposed bones if they are colouring faster than the meat.
