Chilled & Frozen
The trimmed muscle from the middle neck — quick to cook, easy to portion. We supply it within our Middle Necks range under Lamb, to UK wholesale kitchens — restaurants, butchers and caterers. Typical uses include sliced into medallions for fast service, or diced for curries and stews where a cleaner piece than shoulder dice is wanted.
What it is
The eye of muscle running through the middle neck, boned out and trimmed. It is one of the few cuts that works either fast or slow, but it punishes the middle ground: cooked briefly it stays pink and tender, cooked long it falls apart, and anywhere between the two it goes tight.
How it is prepared
Whole fillets, sliced medallions, or diced to your size.
