Beef topside is a lean, close-grained joint cut from the inside of the hind leg. It carries little visible fat and slices thinly and evenly, which is why kitchens use it for carvery roasting and cold-cut service rather than for high-heat steaks. Trade buyers order it whole for roasting, or ask us to prepare it as rolled joints, escalopes or minute steaks.
What it is
Topside comes from the inside of the hindquarter, a muscle that does comparatively little work on a living animal. That gives it an even grain and very little intramuscular fat, so the result depends on cooking rather than marbling. It has stayed the standard carvery joint because it slices cleanly at any thickness.
How it is prepared
We supply topside whole, or barded, rolled and netted to a weight you set. It can also be cut into minute steaks or escalopes for fast service. Because the muscle is lean, confirm portion thickness in advance — thin cuts cook in seconds.

Topside is the standard choice for carvery and roast beef service, thin-sliced sandwich and deli counters, and braising joints where a lean result is wanted rather than a rich one. Because topside has little fat to carry it through overcooking, confirm the finished weight and slice thickness before the order is prepared — we cut and roll to your specification rather than a fixed size. Both. We supply it whole for you to portion in-house, or already cut into minute steaks, escalopes or rolled joints to the weight you specify.
Does topside have a fat cap like sirloin?
No — it is a lean cut with very little surface fat. If you want a barded joint, tell us and we will bard it for you.
Cut specification, portion size and preparation notes are passed to our butchers exactly as you give them — we do not adjust or simplify them. Average unit weights vary from carcass to carcass; please confirm weights and case quantities when ordering.
