Beef eye round is a narrow, cylindrical muscle from the hindquarter that runs alongside the topside. Its uniform diameter, rather than any marbling, is what trade kitchens buy it for: every slice comes out the same size, which matters in deli, cold-cut and portioned work. It is supplied whole, portioned to a set weight, or sliced to a thickness you specify.

What it is

Eye round sits next to the topside on the hindquarter and shares its lean, close-grained character, but its shape is different — long and evenly cylindrical rather than flat. That consistent shape is why it is chosen over other lean cuts for anything that depends on slice uniformity, from pastrami production to portioned roast joints.

How it is prepared

Supplied whole for in-house slicing, portioned to a fixed weight for consistent joints, or pre-sliced to the thickness you specify. Because it is very lean, fast high-heat roasting to rare followed by thin slicing suits it better than slow cooking, though it can also be cured and cooked slowly for deli-style products.

Typical trade use

Thin-sliced cold service, pastrami and cured work, carpaccio, and slow-roast joints cut to a set weight are the main uses. Both are lean, but eye round’s cylindrical shape gives a more uniform slice diameter from end to end, which matters more in portioned deli work than in carvery service.
