Beef tripe is ox tripe, cleaned and prepared ready to cook. It is larger, thicker and firmer than lamb tripe and needs correspondingly longer cooking to become tender. We supply it cleaned whole, cut into pieces or strips, or prepared to your specification, for the long-simmered tripe dishes found across several cuisines.

What it is

Tripe is stomach lining, cleaned and prepared before it reaches a kitchen. Beef tripe is noticeably thicker and firmer than the lamb equivalent, which is why recipes and cooking times built around one do not simply transfer to the other.

Beef tripe is larger, thicker and firmer, and needs longer simmering to become tender. Recipes built for lamb tripe generally need a longer cook time when made with beef tripe.
