Ox kidney is larger and considerably stronger in flavour than lamb kidney, which is why it is almost always used as a component within a dish rather than served on its own. We supply it whole, cored and cleaned, or diced to your specification — the classic use is steak and kidney pie or pudding, paired with a beef cut such as our sirloin or rump.
What it is
Kidney from cattle is bigger and more assertively flavoured than the lamb version, which limits its use to dishes where it is one ingredient among several rather than the centrepiece. It needs coring and trimming before cooking, which we can do for you or leave for your kitchen.
How it is prepared
Whole, cored and cleaned, or diced to your specification. Coring removes the tougher central core; we can do this before delivery or supply it whole for you to prepare.
Typical trade use
Steak and kidney pies and puddings, braises and rich pie fillings are the standard uses — most often paired with a beef steak cut such as our Beef Sirloin in the classic combination. Kitchens running an offal section also stock our Beef Liver and Ox Tail alongside kidney.
