Whole Chicken 1200 is a whole bird supplied to the 1200 weight grade, bone-in and complete rather than pre-jointed. Whole birds are ordered by grade rather than simply as ‘a chicken’ because size decides both roasting time and how many covers one bird will serve; grade 1200 is one of the smaller sizes we carry, suited to single or twin-cover service.
What it is
As with every grade in the whole chicken range, the bird arrives whole and on the bone, skin on unless you ask us to remove it. Nothing is jointed unless you specify it — the grade number is the only variable, so the kitchen decides how the bird is broken down and cooked.
How it is prepared
We can supply it whole, spatchcocked flat for the grill, halved, quartered, or fully jointed into breast and leg portions. Giblets can be left in or taken out, and skin can stay on or come off — tell us which when you order.
Typical trade use
Kitchens buying grade 1200 typically want single-portion roasts, spatchcocked grill or charcoal service, or small-format dishes where the whole bird is the plate rather than a component of it. Where a larger yield suits two to three covers, Whole Chicken 1300 sits just above this grade. For a bird sized specifically for one-cover plating, Poussin is worth comparing.

Both are whole, bone-in birds prepared the same way — the difference is size. Whole Chicken 1300 is the next grade and gives a slightly larger yield; the choice comes down to covers per bird.
Can I get a smaller whole bird than grade 1200?
