Chicken Thighs are the upper leg on the bone with the skin left on. This cut carries more fat and connective tissue than any other part of the chicken, which is why it stays moist where breast would already be dry.

What it is

The upper section of the leg, above the drumstick, part of the same thigh range as our boneless and smoked thigh products. Skin and bone are both retained by default.

How it is prepared

Skin on or off, bone in or out, scored for marinating — confirmed when you order.

Typical trade use

This cut suits roasting and tray bakes, curries and braises, grill and barbecue service, and almost any dish where cooking time isn’t tightly controlled. Where boneless, skinless meat suits your kitchen better, Chicken Thigh Meat is the same cut taken further. For a comparable bone-in leg piece, Chicken Drumsticks and Chicken Leg Quarters are both worth comparing.

Ordering notes

It tolerates being left on the heat longer than most cuts and generally improves with it rather than drying out. Confirm bone-in or boned, and skin on or off, when you order. Ingredient and allergen information is supplied with the goods; confirm the current specification.

Frequently asked questions

Why is thigh considered a forgiving cut to cook?

Its higher fat and connective tissue content means it tolerates a longer or less precisely timed cook better than leaner cuts like breast, without drying out as quickly.

Can I get thighs boned and skinned?

Yes — order Chicken Thigh Meat for boneless, skinless thigh, or ask us to bone and skin this cut to your specification.

How does bone-in thigh compare to a drumstick?

Both are bone-in dark meat from the leg, but Chicken Drumsticks are the lower leg while thighs are the upper section — the choice usually comes down to the shape and size your dish needs.
